Peppermint Patties (Gf, V)

I hope, for the sake of your health, that nobody actually remembers York chocolate bars. Fortunately for us, our dad won't let us forget them. For as long as I can remember those have been his favorite chocolate bars and even though he knows how bad they are for you, he just can't say no. I don't blame him though, chocolate covered minty goodness is hard to resist.


But seeing him splurge on any crinkly plastic wrapped chocolate bar hurts my heart a little bit each time, so I decided it was finally time to find an alternative. Turns out peppermint patties can actually be not so bad for you. This recipe is mainly healthy fats from coconut oil and all the superpowers of raw honey. If you have your own chocolate recipe, I imagine that would be fine to use for the chocolate coating to make this recipe even healthier!




Peppermint Patties


Ingredients:

  • ½ cup coconut oil, melted

  • ½ tsp vanilla

  • 2 tsp honey, raw

  • ½-1 tsp peppermint extract

  • ½ cup chocolate chips, melted*

Directions

  • Mix melted coconut oil, vanilla, honey, and peppermint extract in a bowl together until combined. Place in fridge until firm enough to shape.

  • Line a plate or baking sheet with wax paper or parchment paper.

  • Shape patties into 1-2 inch discs. I've found that the best way to do this is to form the filling into balls and flatten with the back of a spoon or your hands.

  • Place mint discs in freezer until cold. (Around 1 hour)

  • Melt chocolate using a double broiler, then let cool slightly.

  • Once the mint patty discs are cold, remove from freezer. Dip each patty into the melted chocolate until covered. Place back on the wax or parchment paper and let cool until the chocolate has hardened.

  • These can be stored in room temperature, in the refrigerator, or in the freezer!

*We use the Enjoy Life brand of chocolate chips, as they are allergen friendly and vegan!
